After William "Willie" Wise hired the French chef from one of the better restaurants on the Caribbean island of St. Vincent, members of the local business community griped that now the only way to get a good meal was to wangle an invitation to dinner at Mr. Wise’s well-appointed estate. For those lucky enough to enjoy his hospitality, it was an experience hard to forget.
